Ok, so this is my favorite summer dessert, a tradition every summer. I made it twice last week, because we picked up a box of peaches at a roadside produce stand. This recipe is so easy to whip up, and absolutely delicious! Here is the recipe...
1 box Pecan Sandies cookies
1/4 cup melted butter
7-8 fresh, ripe peaches
1 can sweetened condensed milk
1/4 cup lemon juice
1 container whip topping
Crush entire box of cookes, setting aside 1/4 cup of them. Combine the rest with melted butter, and press into the bottom and sides of a 9-inch pie plate. Peel and slice the peaches into bite sized pieces, and place in pie plate over the cookie crust. Blend milk with lemon juice until smooth, then spread over sliced peaches. Spread whipped topping on top, then sprinkle remainder of crushed cookies over topping. Heavenly!
If you hate peeling peaches, a great tip is to
drop a peach into a pot of boiling water for a few seconds. Then remove
the peach and drop it into cold water. Slice the peach in half and the
skin will just slip right off.
